Hubbs was on travel for work last week and I - uh... WELL - I have a confession... When he's not around, I go all lazy mom mode... You know, *like* 'why shave my legs?' or... 'EH, I don't WANT to cook so Panera it is!' OR 'I think I'll spend my lunch break buying shoes!' Yea, that kind of lazy mom and I love it. Don't you DARE judge me, lol.
In the lazy mom spirit, I decided to let Munchface entertain herself cook dinner last Tuesday. She made yummy pita-bread pizzas (and I HAD to send a picture to Hubbs since he's STILL on a silly diet). They turned out amazing!
With this diet thing going on, I HAD to remove all pepperoni-n-cheese evidence. So, when Munchface announced (in front of Hubbs MIGHT I ADD):
"MOMMY, you have NOT been cooking ALLLL WEEK. Are you REALLY going to make me eat CEREAL when I don't have school? Can you please cook like you USED to?!"
LOL - what is a lazy mom to do? Honestly, I fought the urge to pour her a bowl and DARE her (or her daddy) to say something. Everyone deserves a break and if I choose to eat ice cream for dinner when Mr. Healthy is gone, LET ME BE. Instead, however, I decided to make some QUICK biscuits and use the remaining pizza supplies in the fridge.
Here's an EASY tutorial that is GREAT for a last minute lunch or after school snack:
Pepperoni Pizza Biscuits
Ingredients
2 cups Bisquick
1/2 cup milk
3/4 cups (I'm guessing) Pizza Blend Shredded Cheese
Pepperoni (like a handful or so... Again, I'm guessing)
Steps
1. Pre-heat your oven to 350
2. Combine all ingredients. Mix until a sticky dough forms. Check to ensure cheese/pepperoni distribution is even!
3. Put a little flour on your hands. Grab handfuls (again, I'm no chef so bear with me) of dough and place on a cookie sheet
4. Bake for 10-12 minutes until golden brown
5. Let cool 5 minutes
Note: I warmed our leftover pizza sauce in the microwave and we broke the biscuits apart to dip in the sauce. Wouldn't they be perfect party food if you rolled the dough into bread sticks and served with pizza sauce?

ReplyDeleteFirst, thank you for visiting, Marcus! Now, let me say I support those who diet for health. My husband, however, is dieting to further define is 6-pack. I cook very healthy (I could've mentioned we used skim cheese, turkey pepperoni and wheat pitas for the pizza but... eh. Would you want us to eat a chili dog, an Italian hoagie, funyuns and red velvet cake like he did for dinner on SATURDAY? LOL. Crash diets are no good for anyone! O and I love the ate-great comment but... his gym time afford him the opportunity to eat dinner with us. Instead, he's there when we read stories.
